Last night I had my first opportunity to try one of the 2 Pho restaurants in Highlands Ranch (or are there more?). Both restaurants are fairly new to Highlands Ranch, but in the past I had to fill my cravings for a good Pho outside of Highlands Ranch. 123 Pho was on my list yesterday evening and I can say I was not disappointed. If you do not know what Pho is, you have missed out on a great Vietnamese Noodle dish so to speak.
Of course you can get much more than Noodle soup at a Pho restaurant, but Pho is the main dish and a good one it is (at least in my opinion). Pho is a noodle dish and not a soup, but the line is a bit blurry about it as it kind of looks like a soup and many people consider as a soup. The secret to a great tasting Pho dish is the broth and that’s what usually separates the different restaurants in quality.
The 123 Pho restaurant is located in the strip mall at University Blvd. and Highlands Ranch Parkway – very close to the entrance of that strip mall when coming from McArthur towards Highlands Ranch Parkway. The restaurant is fairly small in size, but that actually makes it a great dining experience in my opinion. The restaurant is family owned and is open from 10.30 AM to 8.30 PM seven days per week.
I had a “P1” Pho Tai noodle dish for dinner and it was very good. The broth was great tasting and had a really good beef flavor which I liked a lot. The Vietnamese noodles were very good as well. I had ordered a regular sized meal which was plentiful and very reasonably priced at $6.95. The Pho was served with Sprouts, Jalapenos, Lime and Basil and so it was easy to customize the flavor of the dish. The Pho Tai is served with “eye round steak” which was very tender and fit perfectly together with the broth.
The service was quick and very friendly. You can tell it is a family owned restaurant for sure and I mean this in a good way. Upon paying they even accepted my American Express credit card which is a) my favorite credit card (to collect points) that I use and b) often an issue in smaller, family-owned restaurants as they do not accept Amex. This definitely makes it an easy decision for me to come back and to enjoy a good Pho when the cravings are kicking in.
So, if you like to try something new or if you already eat Pho every once in a while, 123 Pho in Highlands Ranch is definitely a great option to try. You can eat-in or order your food for to go. I have not been there during peak times or weekdays and therefore I do not know how crowded or not-crowded it is, but for a Sunday night this was just perfect for me.
